Generally speaking, these dishes are ❶low-salt and low-oil: this is something I will pay extra attention to in 2018. The food must be delicious without putting too much burden on the body . Homemade: Many recipes can’t be made but can only be watched, because there are always some ingredients/seasonings that can’t be found; ❸Simple practice: the simplicity here does not necessarily mean “quick hand”—for good (hǎo) food and good (hào) food For dishes, it’s worth spending a little more time-maybe they also need to be pickled and stewed, but usually it’s not complicated, even if you’re new to the kitchen, you won’t have a problem following the recipe step by step.

Last week, @Lynn and I went to eat Huoshaoyun's braised chicken, which is the one with only 6 tables and a huge queue! But after eating it in our mouths, we all agreed that "it's okay, but not very amazing", and Lynn said "it feels like home-cooked food is okay". I thought, then I should be able to do it too?

The meals made at home do not need to be authentic or "light up the eyes", they just need to lighten their appetite and have a good meal!


The chicken legs are soft and tender!

When doing it for the first time, I listed a few key points for myself:

The chicken needs to be tender and tasty . I chose chicken thighs and fully marinated them in advance;

The potatoes are too rotten, and some of them still melt into the soup , so try boiling them? After all, chicken doesn’t need to be stewed for too long;

Dai cuisine generally uses natural spices , especially some special herbs, but they are usually not easy to buy. So I increased the amount of tomato (the tomato maniac said that it is delicious to use tomato for seasoning!). Ginger and garlic are also essential in this dish, and it is not recommended to cut them out.

After doing it a few times in a row, this method is quite satisfactory: the chicken is tender and tasty, and it will fall off the bone when you touch it; the potatoes are rotten (rù) but not (kǒu) not (jí) mushy (huà), and they are integrated with the thick soup ; the tomato has a strong flavor and is super appetizing!

Ingredients:

3 tomatoes

4 chicken legs

2 potatoes

3 slices of ginger

1 head of garlic

Millet spicy/beauty pepper according to personal taste

Appropriate amount of base oil

Appropriate amount of non-iodized salt

Appropriate amount of crushed black pepper

crushed white pepper

tomato paste (optional)


▋Chicken leg marinade:

1 tsp fish sauce

2 spoons soy sauce

2 tablespoons oyster sauce


▋Embellishment and decoration:

Appropriate amount of white sesame

Moderate amount of chives

right amount of sesame oil

※1 scoop is about 5ml, just adjust according to personal taste.


Practice

▋Processing Chicken

❶After the chicken legs are thawed at room temperature, cut them into large pieces, each chicken leg can be cut into about 4~5 pieces;

❷Pour the fish sauce, soy sauce, and oyster sauce into the chicken drumsticks, stir well, and marinate for more than 1 hour (you can prepare the refrigerator in advance for later use) ;


✎Know the ingredients

Fish sauce is a kind of condiment obtained by pickling and fermenting small fish and shrimp. It smells a little "smelly" directly, but if you take a little and cook it maturely, it is very fragrant and has a strong salty taste. If not, you can omit it, or replace it with an appropriate amount of soy sauce.

Fish sauce also has some connections with the familiar tomato sauce "Ketchup", which we will talk about later.


▋Process other ingredients

❶Wash the potatoes, cut off the green or germinated parts, and cook until they can be easily inserted with chopsticks;

*Fresh potatoes contain a small amount of solanine, which is not harmful to the human body, but the content of solanine will gradually increase during long-term storage. When potatoes turn green, sprout or rot, the content of solanine will increase greatly.

*If the germinated and green part is not very large, for example, there is only one sprout and only a small part of it turns green, and the potatoes are still firm and not soft to the touch, they can be completely cut off (soaked in cold water), and cooked in soy sauce , stewing, etc., and must be cooked, solanine will dissolve when it encounters acid.

*It is not recommended to eat if the germinated and green part is large and the hand feels soft. Prudence comes first.

Peel the skin and cut into small pieces;    

❷Peel the tomato and cut into thin slices;

Tomatoes must be deep red in color and ripe, with more flavor and easy to stir-fry.

❸ Slap the garlic flat with a knife, remove the outer skin, and then cut into pieces;

❹ Slice the ginger first, then shred and mince it; 

❺ Chopped chili;  

❻ Chopped shallots;

    

▋Processing sesame


Put no oil in the pan, pour in a proper amount of sesame seeds, and fry until the color changes and the fragrance wafts out;

Be sure to use cooked sesame seeds, and it will be delicious enough with fragrant chicken!

▋ Stir fry

❶Pour in the base oil after preheating the frying pan. If it is not a non-stick pan, it is recommended to put a little more than usual;

❷Pour in minced ginger, minced garlic, and crushed chili, and stir-fry fully over medium-low heat until the color changes and fragrance wafts out;   

❸ Pour in the marinated chicken thighs and stir fry fully;

Be sure to stir-fry the chicken until it completely changes color, burns, and smells, so that the anger, browning, and flavor can be fully removed; 

❹Pour in the chopped tomatoes, and stir fry while shoveling them with a shovel. If you think the taste is not strong enough, you can add a spoonful of tomato paste;   

Stir-fry until thick soup-like, add appropriate amount of crushed white pepper to taste;  

❺Pour in boiling water, bring to a boil over high heat, put in the potato pieces, and press slightly with a shovel while stirring (use the shovel to remove the edges and corners of the potatoes, but don’t shovel them all!) ;  

❻Simmer for 25 minutes on medium-low heat, remember to check and stir with a shovel during the period to avoid sticking to the pan;

❼When the soup thickens, add an appropriate amount of salt and black pepper, and stir fry evenly;

❽Put out and put on a plate, sprinkle some sesame oil, white sesame seeds, and shallots.
