✎Know the ingredients
Fish sauce is a kind of condiment obtained by pickling and fermenting small fish and shrimp. It smells a little "smelly" directly, but if you take a little and cook it maturely, it is very fragrant and has a strong salty taste. If not, you can omit it, or replace it with an appropriate amount of soy sauce.
Fish sauce also has some connections with the familiar tomato sauce "Ketchup", which we will talk about later.
▋Process other ingredients
❶Wash the potatoes, cut off the green or germinated parts, and cook until they can be easily inserted with chopsticks;
*Fresh potatoes contain a small amount of solanine, which is not harmful to the human body, but the content of solanine will gradually increase during long-term storage. When potatoes turn green, sprout or rot, the content of solanine will increase greatly.
*If the germinated and green part is not very large, for example, there is only one sprout and only a small part of it turns green, and the potatoes are still firm and not soft to the touch, they can be completely cut off (soaked in cold water), and cooked in soy sauce , stewing, etc., and must be cooked, solanine will dissolve when it encounters acid.
*It is not recommended to eat if the germinated and green part is large and the hand feels soft. Prudence comes first.

❶Pour in the base oil after preheating the frying pan. If it is not a non-stick pan, it is recommended to put a little more than usual;
❷Pour in minced ginger, minced garlic, and crushed chili, and stir-fry fully over medium-low heat until the color changes and fragrance wafts out;
❸ Pour in the marinated chicken thighs and stir fry fully;
Be sure to stir-fry the chicken until it completely changes color, burns, and smells, so that the anger, browning, and flavor can be fully removed;
❹Pour in the chopped tomatoes, and stir fry while shoveling them with a shovel. If you think the taste is not strong enough, you can add a spoonful of tomato paste;
Stir-fry until thick soup-like, add appropriate amount of crushed white pepper to taste;
❺Pour in boiling water, bring to a boil over high heat, put in the potato pieces, and press slightly with a shovel while stirring (use the shovel to remove the edges and corners of the potatoes, but don’t shovel them all!) ;
❻Simmer for 25 minutes on medium-low heat, remember to check and stir with a shovel during the period to avoid sticking to the pan;
❼When the soup thickens, add an appropriate amount of salt and black pepper, and stir fry evenly;
